Banana Walnut Loaf (source MarthaStewart.com)

3/4 cup unsalted butter
2 cups all-purpose flour
2 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1 1/4 cups sugar
3 eggs
3 cups mashed (very ripe) bananas (abt 6 bananas)
1 cup chopped toasted walnuts

1. Preheat oven to 170 degrees. Butter loap pan.

2. Whisk flour, baking power, salt and soda, then set aside.

3. Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. with mixer on low, alternately add in flour, banana, flour, banana, flour. Mix til just combined. Stir in walnuts by hand.

4. Bake 60-70mins, or til toothpick inserted in centre comes out clean.

Pavlova (source Nigella)

6 egg whites
300gm sugar
3 tbsp cocoa powder (optional-this is for a chocolate meringue)
1 tsp balsamic or red wine vinegar
50gm chopped dark chocolate (again, optional)

1. Pre-heat oven 180 degrees.

2. Beat egg whites til satiny peaks form, then beat in sugar one spoonful at a time until meringue is stiff and shiny. Sprinklr cocoa, vinegar and chopped chocolate, fold gently til mixed.

3. Put on baking sheet (approx 23cm in diameter), place in oven and immediately reduce heat to 150 degrees. Bake for 1hr 15mins. Should be crisp around edges but centre squidgy :P

4. Whip up double cream, and cut up whatever fruit you fancy, top the pavlova...enjoy!

It's been some time...

Many changes, one of which is - i have a new kitchen to bake from! All the way in the East, which makes this recipe blog all the more useful, as I can't be carting my well-fingers black recipe folder all around Singapore!

Molten Chocolate Cake (source MarthaStewart.com)
4 tbsp unsalted butter (I'm tellin' ya, President is da bomb!)
1/3 cup sugar
3 eggs
1/3 cup all purpose flour
1/4 tsp salt
8 ounces (226gm) buttersweet chocolate, melted
Icing sugar for dusting
Whipped cream for serving

1. Pre-heat oven to 200 degrees

2. Cream butter & sugar til fluffy. Add eggs one at a time, beating well after each addition. With mixer on low, beat in flour & salt til just combined, beat in chocolate til just combined.

3. Bake about 8-10mins (til top of cake no longer jiggles), remove from oven, let stand for 10mins.
